Ravioli has a huge range. It is a comfort food that you may have snarfed down by the pound as a kid, and it is also served in the world’s finest restaurants. The cool thing is that it is something you can make at home, and when you do you can fill it with anything. There are recipes all over the Web.
Here is one recipe, which is great because it shows you all the steps for making ravioli. It also shows how to create the noodles with a little pasta machine.
First you make the pasta, then you make the filling, then you fill the ravioli:
Recipe for the pasta:
- 3 pounds semolina
- 6 eggs (2 per pound)
- A little water as needed
Mix the dough, kneed it and let it rest for an hour
The filling:
- 3 pounds drained ricotta cheese
- 1 egg yolk
- 1/2 teaspoon cinnamon
- 3 heaping tablespoons sugar
Mix and refrigerate
